Australian Meat Emporium is one of Sydney's largest specialist butchers, working out of a big purpose-built shop and coolroom in Alexandria. It pairs an old-school butcher's counter with a serious focus on provenance, running its own farm at the foothills of the Snowy Mountains that supplies much of its grass-fed beef.
The range goes well beyond the everyday: dry-aged beef, Wagyu, free-range pork and chicken, lamb, game, offal, house-made sausages and burgers, stocks and bone broth, plus a wall of rubs, sauces and barbecue supplies. Whole and bulk packs, catering and gift packs round it out, and the team shares recipes and cooking guides for the trickier cuts.
